Diet Salad and Vegetable Soup

Here are some of the things that I do all summers. Especially for breakfast.

Soak 1 table spoon of Rajma (Red Kidney Bean) and Bengal Gram ( Kala Chana) overnight in a bowl of water.

Boil the beans in morning. I generally pressure cooker the beans and switch off the gas after two whistles.

Now for the salad. You may add lots of fruits and vegetables that are available with you. Today I added the following.:

  • 1/2 tomato chopped
  • 1/2 onion chopped
  • 1/2 apple chopped
  • 1/2 melon chopped
  • 2-3 mint leaves
  • 1 full lemon juice
  • chaat masala -1 tea spoon
  • pepper -1 tea spoon
  • salt to taste

I mix all the ingredients together in a bowl and it’s ready to eat. πŸ™‚ You may also refrigerate the salad for an hour or so and have it cold. I sometimes also add fresh cubes of tofu or cheese but mostly I have it as is. Had this for lunch today.

For the vegetable Juice:

  • 3-4 carrots
  • 1 inch ginger
  • 1/2 cucumber
  • a handful of spinach (blanched)
  • 3-4 mint leaves
  • 1/2 lemon
  • 1 tomato

I put all the ingredients except lemon juice in a juicer and take out the juice.Β  After the juice is ready, I add a pinch of salt and lemon juice in the juice and gulp it down. πŸ˜›

Personally I have never enjoyed drinking any kind vegetable juice. I just drink it for the health purposes and it keeps my skin glowing. πŸ™‚

PS: You may make the salad with white chickpeas as well. Today I mixed rajma and kala chana together but on most days I generally like to have only kala chana in my salad. πŸ™‚

  1. ahh .. the vegetable juice .. my mum prepared that for me in winters .. carrot+beetroot+amla+mint and ghiya maybe .. I detest it but its very good for skin .
    she used to bribe me with money for drinkin this πŸ˜›

    1. lol!! I also add amla during winters. I atleast adds a little tang to the otherwise tasteless juice. πŸ˜€

      Can’t tolerate ghiya in a juice lol!! I like having giya ka raita though. πŸ™‚

      Not a bad way to earn quick money. huh?

  2. I am away from my home from 7:30 in the morning to 8:30 in the evening everyday at least.

    So I really don’t get much time to have all these delicious juices & salads. They tend to get spoiled if i carry them with me to work – besides they are best had fresh.

    But I would carry plain boiled corn with me earlier. Sometimes i carry some curd. Varies. Most mornings I am in rush.. πŸ™‚

    1. Tanveer, you may cut the veggies at night , wrap them in a transparent wrap and refrigerate them. Use these veggies to make the juice early in the morning. It barely takes 30 seconds if you have all the veggies ready with you. As it is it is best if you take this juice empty stomach.

      Yes I also enjoy eating boiled corn. πŸ™‚

    my mother sometimes makes soups in winters using carrots, tomatoes and other things. i don’t quite like vegetable juices, but do love sipping on mixed fruit juices. pav bhaji is a great way to take in vegetables as everything is steamed together.

    1. Pava Bhaji is an excellent option but I like my pavs to be nicely buttered. πŸ˜€ I think most people drink vegetable soup only for health reasons. I mean veggie soups are not the things to be enjoyed. I generally add raw veggies in my knorr tomato soup so I am able to have nutrition and taste together. πŸ™‚

  4. This salad looks gorgeous. I make something similar to, but do not add the fruits, I think I should try that. Just a word of caution when using kidney beans – make sure it is thoroughly cooked. Unlike channa or kala channa, rajma should not eaten if it is not completely cooked (or under cooked with a crunch), as it can be toxic, and in turn dangerous for our system,

      How are you doing? Thank you. I do cook rajma a lot just because I don’t like the taste of half cooked ones. And now that you have given me such helpful info, I would be extra careful. πŸ™‚

  5. Great recipes! I like tomato juice with some black pepper but I want to explore more, will try this! Salad looks tasty too. I try to eat a lot of salad but I don’t have much time to prepare it so I always keep it quite simple, try it out if you want to:

    ingredients:
    -as much as lettuce as you prefer (chopped)
    -a few cherry tomatoes (whole or chopped in half)
    -feta cheese (in little cubicles)
    -some chopped cucumber
    -some leaves of rucola (dont know how to say it in english but it looks like this: http://www.aandemeule.com/Images/rucola.jpg)
    -kernels and seeds like: sunflower seeds, pumpkin seeds, pine nuts,
    whatever you like (or have ‘in stock’)

    For the dressing:
    – 1 spoon of mayonnaise
    -some lemon juice
    -(fresh) herbs like: oregano, basil, rosemary,
    whatever you think is nice. (if it’s fresh, cut it in little pieces first)

    Just mix all the salad ingredients in a bowl and the dressing ingredients in a small bowl and then combine it. Sometimes I use mozzarella or tofu instead of feta cheese and of course you can try out all different kinds of lettuce. You can always vary by choosing other herbs or seeds etc. Enjoy!

      I make a similar salad when I want to treat myself. πŸ˜› I love cherry tomatoes so they have the biggest serving in my salad. I have some salad dressings at home and use them sometimes. But mostly I keep it simple and I am not a big fan of mayo so I kind of avoid it.

    I usually make one with whole moong + 1 or 2 crushed red chillies + 2 tsp shredded coconut.
