How To Make Easy Peasy Basic Sponge Cake
I am trying my hand at writing a recipe for IMBB. All Thanks to dear Parita for all the inspiration and motivation to share my recipe.
I have been baking cakes for years now and have tried a lot of recipes. I prefer home-made tea-time cakes over the ones we get in shops. The one that I am sharing with you all here is the simplest of all and does not require much expertise in baking.
You will have to get the following ingredients and you just have to mix them all altogether in the mixer. This is what all you will need:
About 3/4th cup of sugar or 1 cup castor sugar (powdered sugar). You can measure 3/4th cup of sugar and grind that first in the mixer and let it stay there. This amount of sugar makes a decently sweet cake. In case you like your cakes to be more sweet, you can take more of sugar.
1+1/4th cup of refined flour. It is advisable to sieve the flour 2-3 times for better results. I do always follow that.
Half cup of oil. I am taking olive oil here. You can also take your normal refined oil or melted butter. The cake gives a better taste with butter, but tends to stay a little less soft and would rise less than the cake, which is made out of oil.
About ½ cup of milk.
Around ½ cup fresh cream.
1½ tea spoon of baking powder.
A cake tin to bake the cake in. I am using a pound cake tin here. You can bake in a normal tin too.
Also, add 4-5 drops of vanilla essence. I sometimes add 1 spoon of custard powder to my cake batter.
Now, take everything in your mixer jar and just mix it for not more than 20-30 seconds. Remember not to overdo the mixing part, but just make sure it looks like a fine cake batter.
Pour the cake batter in the greased baking tin. (You can grease the baking tin by taking just little oil in it and applying it properly on all the sides. Then you can sprinkle in some refined flour on that and dust off excess.
Greasing the baking tin is important, so that our cake does not stick to tin and detaches out well).
Since I took a pound cake tin here, I have to make sure that I pour the cake batter on the sides only, missing the centre part.
I poured some cake batter in these cute muffin moulds too.
Place the cake tin in pre-heated oven at 180 degree for about 30 minutes.
Keep checking you cake after every 5-10 minutes. Once it turns golden brown check the cake with a needle. If it comes out clean with no liquid batter sticking on it, your cake is done/baked.
Let the cake cool for some time in the oven itself. Once it reaches normal room temperature, you can take it out.

Here are a few pointers worth keeping in mind:
• Always preheat your oven and DO NOT change the temperature settings while baking the cake. Also, do not open the oven and check your cake before it is baked.
• Do not over mix your cake batter in the mixer.
• The proportions of all the ingredients in the cake should not be changed at all.
• If you feel the consistency of the cake is slightly thick, add some milk, but DO NOT add water.
• If you wish to make a chocolate cake, just sieve 2 table spoons of cocoa powder with the refined flour.
• You can also add raisins, tutti fruity bits and walnuts for added taste.
