Vegetable Schezwan Mushroom Fried Rice
Hi IMBB Sweeties,
I am sharing my favorite Chinese recipe that takes hardly 20 minutes to prepare. My love for Chinese recipes grew more and more with age. I can never forget the Uncle’s Kitchen fast food corner at Mumbai. My passion for Chinese food grew there.


1-For the recipe, we need chopped onion, garlic, French beans, carrot, and capsicum, chilly and shredded ginger.


2-Am preparing vegetable Schezwan mushroom fried rice, so using a pack of button mushroom for that. You can replace mushroom with egg, fried chicken pieces or paneer.

3-Fry the chopped mushroom pieces in one tbsp of oil, till its cooked properly.

4-Keep the fired mushrooms aside, heat oil and add red chilies into it.

5-Add one chopped green chilly in it.

6-Add one tbsp of finely shredded ginger and mix it.

7-Add 2 tbsp of chopped garlic.

8-Add two medium sized chopped onions and fry till they turn golden brown.

9-Add fried mushrooms in this step and let all ingredients cook properly.

10-Add finely chopped French beans.

11-Add grated carrots.

12-Add capsicum pieces and fry well.

13-Add salt according to taste.

14-These are the spices and sauces we need now.

15-Now we add 1 tbsp of green chili sauce.

16-Then we add 2-3 tbsp of Maggi hot and sweet tomato sauce.

17-Add 3 tbsp of Ching’s red chilly sauce.

18-Add one sachet of Ching’s Schezwan Miracle masala into the vegetable mixture.

19-Add 2 cups of boiled basmati rice and mix well.

20-Now here is your Chinese fried rice ready.
Note:
If you don’t have Schezwan miracle masala, prepare the Schezwan sauce in following way.
Schezwan Sauce:
You will need:
-Two Large Onions
-3 Green Chillies
-10 to 12 Red Chillies
-15-20 Garlic Pods
-Coriander or Parsley Leaves.
-Azinomoto.
-Maggi Hot and Sweet tomato Sauce.
-Soya Sauce.
-Vinegar.
-Ginger –garlic Paste
-1 tbsp Shredded Carrot
½ tbsp Sugar.
Method-
1-Add 3 Tablespoons of vegetable oil in a Kadhai. When the oil is smoky hot, add 2-3 red chilies. Remove the chillies and keep the oil aside.(This oil is particularly used in Schezwan preparations)
2-Boil the Rest of the red chilies and garlic pods in water. After that make a fine paste of boiled red chilies, garlic and onions.
3- -Add the oil prepared in the first step into the Kadhai. When it’s hot, add shredded green chilies, onions, garlic and carrot. Saute them properly.
4-Add the above prepared paste into the Kadhai along with one tbsp of Ginger garlic paste. Fry it till it’s cooked properly.
5-Add sugar, vinegar, azinomoto, soya sauce, Maggi tomato sauce and a glassful of Corn flour and water solution. Mix it properly and let it cook for 5-7 minutes.
6-Then when the consistency of the Schezwan Sauce thickens add parsley or coriander leaves. Then you are done with it. You can keep it refrigerated for 3-4 days.

Thats so sweet of you dear, you will find this powder at big bazar and other super market or else you can prepare the schezwan sauce for more authentic taste, I have mentioned the sauce recipe too!

No no , its a chinese sauce na Komal, so its very spicy, you must be knowing chinese believe in having lots of chillies in their recipes as chillies aid in digestion but we all cant bear it na, just use the sauce 1-2 tbsp in fried rice!
