Gold rings with the names of your parents engraved would be a good idea. Or gift them a nice holiday to a place they have always wanted to go. Or if your parents are into gadgets, gift them tabs or phones

since you have some time, what you can also do is collect old photos of theirs, like their engagement pics, wedding pics, and pics from important events and phases in their life, make a video with beautiful captions etc and have it displayed during the party! You can take the help of professionals in this.
on my parents silver jubilee, we made them marry once again like sangeet, feras and all. we enacted a skit for them and a photo collage on the projector as well. next day we made them go for second honeymoon 🙂 🙂 🙂 🙂

collect their old pics- when they were not married to till date. And scan the pics
make a video with those pics that how two diffrent people met and then they got married, had kids and all that. Trust me they will see the whole journey with that video

On my parents first anniversary last year we redid their wedding video film style! They loved it. And we made small teasers of their wedding functions and played them in the party (with latest bollywood songs)! My mom ws overwhelmed!! So if you have some time in hand I say go for it!
